Cream is an emulsion. yes it tends to disintegrate when heated, more so on high heat, and this is precisely how the desi ghee is made from cream. But we do use cream in no. of preparations and do it gently.

I don't know how rajat exactly went about it, or would love to see his final pic of the chicken, but the theme is very doable. He can use Bechemal Sauce aka White Sauce and add lots of cream to it and finally drop in the almost done drum sticks and he can use milk instead of water to cook the drumsticks.
You know every one has his own way and variations galore.

Hope Rajat does not take any offense.

Two things.

I just made chicken yakhni coz i was geared by your recipe and wanted to show you another variation of another kind and also teach chikoo how to make it so I took lots of pics but each pic size is about 3 MB. I think i did it with very very high definition on. [btw i am a very very poor and lousy photographer]. Now would some kind soul trim them or help me post them with my commentary. I can load them on hotfile.com or any other media or method suggested by those who are good at posting.

secondly, let me refine your recipe for you and post it on a seperate thread. you can try it at home later.

I would also be posting Chicken Yakhni with pics once someone helps me.

Gulloo sir, you can resize the photos using Irfanview, a free program.
If resized to 800X600 resolution they will upload fine and fast.
I could upload them for you, free this time, but in future it'll cost you a few creamy drumsticks! :grin:
