Yummy :D

Instead of adding curry leaves to the oil, I stick them on to the fish and then fry.
This way, it requires lesser oil and masala will stick on to the fish and not to the pan.

So what is to be done with the spice mix that has been sitting for 30 minutes?

One more idea from me , make a paste from mustard seeds 3 table spoon for 1 kg fish and fry with low temperature for 30 minute when you see redish flavour coming in, pour water and them fried fish after, add salt to taste, let them boil for another 10 minute on high flame and done, yummy bengali fish curry is ready.
