How to start a roadside food stall business?

Indore....only poha,jalabi,kachori and samosa....LOL
Think of Mexican its near to taste buds of Indorians.

Hello everyone,

I am planning to start a food truck in Lucknow as I feel it is an untapped territory in these kind of cities. There are a number of food trucks already doing business in Delhi-NCR and Bangalore region and I feel the only way this business can go is upwards. Currently I am working as an analyst in Gurgaon but love for cooking and aspiration to become an entrepreneur wouldn't allow me to do this job for a long time. I would like to implement this idea in the first quarter of 2016.
I was looking for a partner for my startup. Anyone having the same passion for food (eating also included :p) and who is interested can discuss the idea in detail.
I am more than open for suggestions and ideas from the members of the forum as well as info regarding all the permits and licenses which are required for the same.

I came across with this post recently and found it quite informative. Thanks for sharing your views. I would like to ask three more questions here, hope you will help me answering that:
1. Since I am planning for road side street food/van , do I still need all those sort of licenses from govt. Authorities? if not, What do I need then utmost?
2. How do I think can I deal with goons, hooligans, local cops and other complaining elements? They are very much of nuisance very often. I have heard of municipal team just throwing the road side vendors, they take away their shops and put lot of fine. Also the goons try to extract money from street vendors so are the cops too. How do I deal with them on daily basis?
3. The third question which haunts me is about the right people. You see starting a street vendor business is not a big deal if u can take care of top 2 issues. luring by the profit you are having in your business and cost of setup, your cook can take your business away? Even if u are cooking on your own, then also u can face a lot of problem for the right staff at right time. How to deal with this uncertainty?

Please elaborate if can on all the three concerns of mine. I will be helpful and grateful to this forum.

Goto Muncipality.


Ask there for formalities for road side vendors.
Muncipality also can be handled with old ways.
They will support you if you have good relations with them.
In Muncipality apply for licence if possible or arrange one at premium.

Goons do not come daily.
If so then clearly tell them to keep distance from here.
This is enough mostly.
If some issues are not solved this way.
Try cops.
They are best at it.
You have to much effort in starting only.
Business has its own challenges.
Keep cops in your hand,
the old way.
If necessary call your known cops.
Inform Local Newspapers about this.
Press may help you out little.

Cooks can be competitor and this is not true for all.
Only few cooks can do same like you.
Keep extra boys and train them little to help main cook as this will help you when no cook will be there. You can get good help from these boys.


Main problem is daily routine.
These issues will come after some time gap only.
Make some friends in same business.
Help them out and take help from them.
Such friends can be from same locality or nearby area.
Even helper boys may tell you about other persons in trade.

For you I will suggest you to operate a Canteen in any corporate office or any big office.
This option is also good.
Collect some money to this business in this way.
All should think of only street food only.
Think of 24 hours business also.
Some Offices need roud the clock service.
You are in an IT office.
You have enough time to research on these lines.
Try to find these options in your own style.

Hello All,

I am 22 years old small town rider/engineer who loves only two things in his life - travelling and eating. I am into my first job since last 6 months in IT industry and by now I have realized its not what I want to do in my life. Zero level of satisfaction and huge losses on physical, emotional and mental levels. I always wanted to do a job I love. But obligations to earn a bread and shelter for myself left with no choice but to take up the job of Software developer in an IT giant where now I earn a mere salary and fight my way in and out of office to survive.

Anyways back to the topic. My aim is to establish a chain of roadside/pavement stalls (or carts) where I can sell delicious snacks in a hygienic way at reasonable prices which delights my customer. My USP will be 'Food Globalization'. I can take care of marketing, finance and sales. I want to understand my customer, his demands and prospective markets; and slowly grow and expand. After stabilization and payback period, my plan is to quit my code-crunching job and expand business to other cities.

Now problem is - how should I start? Since I have not much idea on operations and HR, please help me find solutions of the following doubts -

* What are the legal formalities involved in setting up a roadside stall (which looks more organised and cleaner)?

* How does a small scale restaurant business recruit cooks/chefs? Suppose I want to open a samosa stall or Momo stall. How and where shall I find a guy who knows well to make delicious samosas or Momos?

Please start helping me by pouring in your valuable suggestions. If everything falls in place, I will kick-start my first shop before June next year.

P.S.- I don't have loads of money because I have started earning recently so the idea is to start with a basic stall (and hence not shop - I m poor) selling only couple of items on menu and observe the success/failure of first setup and carry on accordingly.

Amir ! 1-initially just approach local municipal office or Panchayat office whichever is applicable to area where you want to start, with a written application stating eatery/outlet name and kind of business ie: cooked meal/prepack or fast food, and if possible with layout plan (if it is a concrete shop then, for toilet purpose as authority may ask) and no- objection letter of land owner.
2- Once you have a permission you are king, give some advertisements or approach personally cooks/helper etc as it will be better idea so that you can convince them with your future plan and offer them some percentage apart from salary.
3- once everything is ready, grocery,oil, spices, gas and crockery etc and ready to serve your meal/snacks, call ME:grinCMT members for business.
Rest I will tell you when you will disclose as from where exactly you are as all Lucknowities are Nawaab by nature and shaokeen for....;)kabab, shabaab

You have to ask the owner of the place. Most owners are not friendly but wherever you find a good person who understands the business will support you and you may get some help also at times like water / electricity etc. Business minded persons usually help and you can also payback in same way. Just go out and try as you have to start one day or the other.
