Yes, you could, though not in white! Brown or black would be more suitable. This fan will collect a lot of oily grime in a short time. Go for the largest size that can fit in the ventilator.

A big NO to Exhaust Fan if you are considering Chimney
With Exhaust Fan, you would find Oil Vapours everywhere in the Kitchen - Wall Tiles, above Cabinets, near and below Exhaust fan. Also you must be technically sound to dismantle the Fan and give Caustic Wash to oil drenched blades and vanes.
It is much easier to remove and clean the Aluminium filters of Chimney in soap solution with Paint Brush or even in Semi Automatic Washing Machine itself.
Chimney being directly above the cooking area captures fumes and flue very effectively sparing rest of the kitchen.

Chimneys are noisy and need good maintenance. Period.
We used 3 different models and all of them proved useless in our homes. It is the big exhaust fans which actually comes to rescue, and chimneys are hanging unused for aesthetic purpose only.
You should buy the biggest exhaust fan with heavy duty motor, and use a dimmer control switch to lower the RPMs.

Cleaning the blades, etc. of an exhaust fan are much easier than chimneys. Chimneys with baffle filter will leave you baffled with your decision pretty soon after purchase. :D

We use oils and spices in kitchen and it requires a casual cleaning every 2-3 months and a detailed cleaning once a year (Diwali, you know!). :)
 
Get baffle type chimney that has No Filters.
Check offline also to understand pros & Cons.
Check those models which should not make noise while operating.

Baffle for chimney means :
A metal filter that traps dirt etc in its metal type zigzag filter. This is arranged in a manner that air flows through it but dirt gets stuck to its surface, saving a mesh filter from choking easily with oil drops.
