Here is a simple recipe for Onion Pakora
Plain Besan (Chickpea flour)
Add salt and red chilly powder to taste
Cut up onion into long strips
Mix a little bit of water. You can do away with water if the onions are fresh and jucy. The water from onions is enough to bind the besan, but I like some more besan with my pakoras.
Mix the onions. The mixture should be as dry as possible
Heat oil till it is smoking hot. The hotter the oil the less it will soak in.
Reduce the heat after a minute and cook till the edges are golden brown. Here I am cooking the second lot.
Enjoy with tea and a tasty sauce
