Sweet & Hot Corn Muffins

Browsing internet is very useful. It gives you ideas of other people and also how other people are going about.
I was pleasantly surprised to note that people use fruit sauces in lieu of fats and eggs. For example pumpkin sauce, apple sauce etc are used in lieu of eggs and fat since they provide the necessary moisture.

Time to experiment.

So I decided to give it a try.

Unsweetened Apple Sauce :


Take an apple, Peel it. Remove core and chop in slices

Pour in water and cover it

Keep checking , if the water is less add more.

Boil the apples till done. Remove from fire and blend them into puree

Take a cup of corn flour

take a cup of Maida

half a tea spoon full of salt

half a tea spoon full of baking soda

and whisk to mix thoroughly.

take 40 gms of butter

Melt the butter in oven

and pour it in another bowl

add a quarter cup of the apple sauce [ Apple sauce is substitute for fat and egg, otherwise we would have used two eggs and 110 gms of butter]

add a quarter cup of powdered sugar

add a quarter cup of sweet and hot Thai Suace. [ We substituted it for honey to make the muffins more tangy. The sauce contains sugar,red chiili, vinegar and garlic]

and whisk to mix

Meanwhile de seed six green chilies and chop them finely. Put the chopped chilies into the mix

and add a beaten egg

mix

add a cup of buttermilk

mix and add the wet mixture to the flour mix

and fold the mix

Oil the muffin trays. Though these are non-stick trays, we still oiled them.

and pour the batter into muffin cups

Garnish the batter with green chilli ring

and put them in the pre-heated oven at 180 C

and bake for 20 minutes

and enjoy with sweet and hot sauce.



Lessons Learnt :


- The batter should be little more wet.


- We should let the batter rest for about half an hour, so that the corn meal soaks in the moisture well.




 
sounds interesting, muffins with apple sauce, chillies, thai sauce. I would definitely try to make some with a fruit pulp/sauce but am a bit hesitant about using chillies and thai sauce.

Thanks rupinder. You can use honey instead of thai sauce. Adding chilies enhances the sweetness of the honey and sugar. When we tasted the muffins they were not hot, rather a welcome mix of sweetness and some bite.
But remember three things
- keep the batter wet.
- Let it rest for some time
- and add some more leavening agents like baking powder. You can also let the batter rest for a while and then add the baking soda and baking powder at last, so that the gasses released are kept trapped.
