thuglife,

D5300 ( Newer sensor and larger resolution ) is much better choice over D7000.

@thuglife , you have to mention 1. what genre of photography are you interested in , 2. What are your present lens lineup and 3. whether you want to mount older Nikon lenses and do some off camera flash use ? These are critical points without which suggestions will be less effective

How advance are you in photography?
D7000 series is one level up to D5000 and D5000 is up one level to D3000 series. The upper level cameras always has more features. However, D7000 is upgraded with D7100 and now the latest D7200.
Similarly, D5300 is upgraded with D5500. Nikon has skipped with D5400 no. for some reason which I don't know.
So comparing the above D5300 is one model below the top model and D7000 is 2 models below the top model.
Sensor and auto-focus technology is evolving every year and keeping this in mind the D5300 has a better sensor (released latter) compared to D7000 and auto-focus some what the same.
However there are few features in D7000 series that are missing in D5300, so if you don't know what they are you'll certainly won't miss them until you'll learn about them in few months or years. By that time your present camera will be obsolete and you'll be looking for a camera with latest tech.
So after all the blabbering I'll say the D5300 seems a better choice than D7000.

thuglife, click the same scene with both the cameras-buy whatever you feel gives the better output to your eyes-though i feel you'll plump for the d5500-the photos just look a wee bit better(more modern:)) on the d5500/d5300 than in the d7000-seems to be the processing algorithm thing(more advanced in the d5500) as well as a better more resolution (Detail) sensor with better resolution of colours n contrast(dynamic range)
Enjoy the buying process.

Though the OP has not responded but I will utilize this tea break for ranting a bit :-

I am writing from memory, a weak memory at that because I simply can't remember which particular model is what , so let us paint with a broad brush. The two contenders being the 7XXX and 5XXX series. I have seen a lot of guys entering Nikon the 5XXX way and in few months time either moving to 7XXX series or go somewhere else. If I think a bit with my muddled mind , please pardon me for saying so, Nikon is perhaps using the 5XXX series as the consumer baiter , high megapixel, Light ( rather less mass hence more prone to shake), dinky little flipping LCD, a dark as my future kind of excuse of a viewfinder but WIFI checked, GPS checked blah blah.

The 7XXX series is targeted more towards the "photographers" among us , ability to use old AFD lenses retaining autofocus ( get 50 1.4.AFD save 10k, get 85 1.4 AFD and save ooops a cool 50K , get an old 80-200 f2.8 afd and buy a bike with the savings ), ability to use flash in commander mode , dedicated buttons for wb, iso , etc etc ( the buttons that are supposed to be used more ) , dual card slot ( a virtual life saver) , top LCD and U1,U2 menu banks ,better body , almost a FF like view finder, better buffer if you need for wild life . The 7XXX series brings a lot to the table.

In my opinion image quality is much more dependent upon lens and the skill of the photographer ( both shooting and PP). The body stays in between the lens and the photographer's eyes and facilitates the capture. I would not ask much help from the body , I would rather ask it not to come between an image and me. In that sense I always find the D5XXX bodies to be quite limiting. But YMMV :)

I broadly agree with somnath and would like to add a bit more confusion for the first poster ;) -

If you plan on using one lens, either camera is great - you've basically turned a DSLR into a PnS.
If you plan on using older manual focus lenses - available from time to time on JJMPF online - go blindly with D7000 (the in built motor is good - I have a D7000 now).
If you plan to do both video and photo D5300 is a winner. D7000 is quite limited in video capability due to the lack of tilt screen.
If you plan to photograph moving subjects close to the ground - young children, dogs, etc - again D5300 is better (due to the tilt screen)
If you plan to shoot in wet / semi - wet conditions such as snow / rain - D7000 is much better due to better weather sealing. My trip report in signature has some shots from Pin valley - I fell down in snow a few times but nothing happened to the camera - it worked great throughout. Note that the D7K is only weather sealed and not waterproof (that honor belongs to pentax as far as consumer DSLRs go)

Personally, I think Nikon is taking the world for a ride by having the D5xxx series. Its positioning is confused - the D3xxx and D7xxx series are clearer winners. Also a camera is as much ergonomics as specs. (I still remember what a boy wondered outside bharatpur sanctuary gate about my camera - 'sa'ab - kya camera hai, megapixel bhare pade honge itte bade mein to). Oh, well.
