World’s best Gajar ka Halwa.

Wonderful recipe...
The trick to a good 'Gajar ka Halwa' is in the stirring...it has to be done almost continuously to prevent the milk from getting burnt.
And the desi ghee gives it that special boost!!
 
Thanks Doc sahab for the recipe, need truckload of luck to materialize the recipe on weekends! Will surely try it. Never knew, you also soak almonds, cashews etc in milk!

Carrots: 2 kg
Full cream milk: 2 liters
Desi Ghee: 150 gm
Khoya : 250 gm
Sugar: 750 gm
Ilaichi: 10-15 pcs (Crushed and Powdered)
Raisins: ½ cup
Almonds: ½ cup
Cashews: ½ cup
Pistachios: ½ cup

Well, I didn't say I do not eat Non-Veg.
I used to eat (only) Chicken in Non-Veg till some time back. Just that I haven;t eaten it for some time now.
I do eat Eggs.
All vegetables, except Gajar, Tauri & Kaddu !!

Needs here a few inputs
1. Should we add a previously boiled milk to carrots or can we add the raw (unboiled) milk to it.
2. which one is better, to add all the milk in one go, or to keep on adding small small quantity of milk at certain intervals.
3. I have seen many, read almost everyone known, to add the ghee only when all the milk dries up. I did an experiment and started cooking carrots with ghee for about 10 mins and then added milk to it. Whats the difference between two methods.

GLR, it was you who inspired me for making it.
Trust me it is quite simple, just manage all the ingredients in right ratio.
For soaking cashews, almonds and raisins in milk, it was the idea from my best half. :grin:

I think previously boiled milk is better!

Better to add the milk in one go!

Ghee after the milk dries up is better!
My answers in bold....or rather, my better half's answers in bold.
She normally looks after all these nitty gritty issues....my job it is to look after global issues like telling her that the halwa must be TASTY!!:grin:;)
